Oven Baked Spinach Chips.

Ingredients
• Bucket load of spinach leafs. I am talking about handfuls here!
• A bit of extra virgin olive oil, to coat the leaves. You don’t need a lot - for 400 grams of spinach leaves, I used 1 tablespoon of oil.
• Herbs. I used pepper, curry powder, red pepper powder, garlic powder and thyme.

Directions
1. Preheat oven at 120°C / 250F,
2. Rinse and dry the spinach leafs,
3. Place spinach in a large bowl, pour in some olive oil to coat the leafs,
4. Add herbs, toss it all around,
5. Place some baking paper on a tray, and lay out the spinach nice and evenly,
6. Pop them in the oven for 15-20 minutes. Keep checking on them until they’re crisp!

Vegan Club Sandwich with Oven Chips

Ingredients

  • 150 grams (3/4 block) Extra firm or baked Tofu
  • Portabella mushroom caps, sliced medium thickness
  • 2 Tbsp Canola oil
  • 1 Tbsp Cajun spice mix (or Steak rub, or similar)
  • 1 tsp hot sauce
  • 4 Tbsp Nayonaisse or other vegan mayo
  • 2 Tbsp Dijon Mustard
  • Juice of 1/2 lemon
  • 6 slices of bread (I used Whole Sprouted Wheat)
  • 4 tomato slices
  • 4 lettuce leaves
  • 1/2 avocado, sliced
  • salt and pepper to taste
  • 1 Large Russet potato, sliced into chips
  • 1 Tbsp garlic powder

Directions

For Portabella Bacon

  • Preheat oven to 350 degrees F
  • Gently toss portabella slices with 1 Tbsp oil, cajun spice mix and hot sauce
  • Spray a cookie sheet with nonstick spray and place mushrooms on sheet. Discard very tiny pieces. 
  • Bake at 350 for 15-20 minutes until edges are crispy. 
  • Transfer to a paper towel, set aside.

For Tofu

  • Slice tofu into 1/4” slices
  • Make a mix of dijon mustard, the lemon juice and a little water
  • Coat slices of tofu in mixture
  • Cook in hot pan (I used a stovetop grill), until browned.
  • Turn pan to low, continue to coat tofu in mustard mix as it is absorbed

For Chips

  • Turn oven up to 400
  • Slice potato into thick chips, put in water bath
  • Drain water and toss chips in 1T oil and garlic powder
  • Lay on cookie sheets so chips are not touching
  • Bake 15-20 minutes, turning once until chips are cooked and browned on edges
  • I combined both trays of chips at the end and put them in the broiler for a few minutes to crisp them up even more. 
  • Toss with salt and pepper before serving

Assembling sandwiches

  • Toast 6 slices of bread, cover with aluminum foil to keep warm
  • Make one sandwich with Vegan Mayo, Tofu and avocado slices
  • Stack lettuce, tomato and portabella bacon on top
  • Top with another slice of bread, coated in Vegan Mayo
  • Insert toothpicks to keep sandwich together
  • Cut in half
  • Serve with chips
